2.62 MD – Vegetables (Non-starchy)

The Mediterranean Diet allows 4-8 servings of non-starchy vegetables per day. Remember that non-starchy vegetables include any vegetable except for potatoes, peas, corn or squash.

Including a lot of greens (collard, Swiss chard, kale etc…) is important. Any other non-starchy vegetable such as broccoli, green beans, cauliflower and peppers are also good choices.

One serving size is about ½ cup of cooked vegetables or 1 cup of raw vegetables.
